Tonight I had a fabulous dinner. First off I really like turkey sandwich's, and to make them a little more tasty. I like to turn the oven on broil and throw my bread in the oven so it gets warm and crisp. All I put on my sandwich is deli turkey (I like the mesquite smoked turkey), lettuce, and tomato. Tonight I decided to add a little spread to it. It turned out great. For the sauce you use:
1/8 C Fat free mayo
1 T Fresh chopped cilantro
1/4 tsp lime zest
1tsp fresh lime juice
1/4 tsp ground cumin
1/8 tsp ground red pepper
Mix it all together and you have enough servings for 2 sandwich's. To top of the dish I made some baked zucchini fries (Thanks Mirjam for suggesting this fabulous recipe). For the fries you cut the zucchini like carrot sticks then you roll them in a 1 1/2 T flour and 1tsp Italian seasoning, and 3/4tsp salt mixture. After that you roll them around in some eggs whites (that have been beaten into soft peaks. Then you roll them around in some bread crumbs. You bake them at 425 for 12 minutes and turn once half way through. They are delicious. They are even good dipped in a little ketchup. I think I will be eating this meal a lot in the near future.
